Maybe it has something to do with the recent Warner deal to distribute Paramount stuff? (Or is that just in the States?)

Nope, there is a much easier way.

You rip the Blu-Ray to uncompressed MKV using MakeMkv and then you can add the srt to the MKV using MKVToolNix.  Providing your player can playback MKVs it will play perfectly.
I have just finished job of adding custom subtitles onto untouched Blu-ray with the help of three little Chinese programs. The whole procedure lasts only five minutes. This gives opportunity for buying non English-friendly discs and adding English subtitles later.

Do you think the German release is the best one to use for a custom BluRay? I mean, I really do not know which one is better, UK (Shameless), German or French release... Thanks in advance, mate.

No release is perfect. The French release does not include the missing scenes that are reintegrated into the German and UK BD. The German picture is slightly better, does not attempt to manipulate the closing sequence, has better extras and does not suffer from the loud audio pop that UK BD has in the closing sequence. Though I am sure that Marc told me that the German BD is missing footage. Can you clarify Marc?
